How should I reheat a take-away meal?

Make sure to follow these rules when it comes to reheating a meal, therefore reducing the risk of growth of harmful pathogens and the risk of food-borne illness.

 

  • Whether in oven or microwave, ensure you are reheating the food to an internal temperature of at least 74 degrees Celsius, to the point where the food is hot and steaming.
  • It is advised that a food thermometer to verify the internal temperature of the food.
  • Reheat sauces, soups and gravies to a boil.
  • If reheating in the oven, set oven temperature to no lower than 163 degrees Celsius.
  • When reheating food in a microwave, cover the food and stir it for even cooking. Turn the dish by hand once or twice while cooking. Cold spots let germs multiply and can make you ill.
  • Reheat food only ONCE.
  • Do NOT reheat cooked food that’s been left at room temperature for more than 2 hours.  It’s best to dispose of it all together.
